greatest gift..


i do believe in the saying that "everything happens for a reason"..though i stumble and fall i learn how to stand up again and show to the world that im strong.though at first many people judge me and hate me for what i've done still i prove to them that they're wrong and someday they will just eat what they've said against me.
But now,thank God everything runs smoothly,i just realize that its a blessing in disguise.im happy and very much contented with my life.im so lucky because God gave us the very precious gift that every couple wanted and that is our baby yhuan emmanuel.everything is so wonderful and that is all because of the two boys in my life,my baby yhuan and my lavz em-em..

I dreamed about having someone there for me, someone i could talk to
then i met you and told you everything, so i guess my dream came true
you helped me through more than anyone else, and that means lots to me
i really want to thank you but i get embarrassed, so this is my way of letting you see
you stopped me from being sick and saved me from my knife
you let me see there is people that care about what happens in my life
you gave me something to work for which made me feel so loved
you involved me in my life and no longer aside was i shoved

Then i had theses nightmare's that you were going to leave
but i put them to the back of my head, bcos i wanted to believe
you told me i could tell you anything and that you would always be there
you promised i could trust you and you said you would always care
and to be really honest with you i put my heart on my sleeve
then i thought you took it and broke it, so then i couldn't believe

But now I'm having the dreams again and i know your still here for me to talk to
so even though i had the stupid nightmares my dreams were the ones to come true
and this little poem is just to let you know they only became true because of you

my recipe

CHOCOLATE CHIP COOKIES


2 1/3 cups all purpose flour
1 teaspoon baking soda
1 teaspoon salt
2 sticks (1 cup) butter
3/4 cup granulated sugar
3/4 cup brown sugar
4 tablespoons Kahlua Vanilla Rum
1/2 teaspoon vanilla bean paste (optional)
3 small or 2 large eggs
2 cups chocolate chips or chunks
1 1/4 cup walnuts, pecans or Macadamia nuts, chopped
1/2 cup raisins, Craisins or dried cherries, chopped

Preheat oven to 375°F.

Before Baking:

Remove butter and eggs from refrigerator about 20 minutes before baking. Soak raisins, Craisins or dried cherries (or a combination of these) in 4 tablespoons of Kahlua Rum for 1 hour before using. After dried fruit have soaked up the rum, measure two tablespoons of rum/raisin liquid and reserve to add to cookie dough.
Cut sheets of Reynolds Parchment Paper to fit the cookie sheets that will be used. The paper helps to keep the bottoms of the cookies from becoming too browned and the cookies slide off the hot sheets easily, making clean-up a breeze.


Making the Cookies:

In the bowl of an electric mixer, beat together butter and the two kinds of sugar until creamy. Add one egg at a time, beating after each one is added. Stir in 2 tablespoons of vanilla rum and the bean paste.
On a piece of Reynolds Parchment Paper, sift together flour, baking soda and salt. Folding paper in the center, gradually pour flour mixture into the mixer bowl while mixing at the lowest speed. Mix only until combined; do not over-mix or the cookies will be tough.

Using a wooden spoon, stir in chocolate chips, chopped nuts and dried raisins/fruit.

Drop onto baking sheets lined with Reynolds Parchment Paper by spoonfuls using a small ice cream or cookie scoop or two large tablespoons.

Bake from 9-12 minutes or until golden brown along the edges. Remove from oven and allow to cool for 2-3 minutes before removing to a cooling rack or flat cool surface.


Variation: Drizzle or dip cooled cookies with tempered chocolate or dipping chocolate.

Makes 50-60 cookies, depending on size.

Note: Most of the alcohol evaporates during baking, but you may substitute the rum with 1 teaspoon vanilla extract in 1 1/2 tablespoons of water in this recipe, if desired.

chicken curry recipe

This curry recipe is one of my favorite Filipino chicken recipes in the database. In my family, Filipino chicken curry is a dish that we usually make during birthdays and parties back in the Philippines. But here in Canada, I continue cooking this chicken dish during special occasions because my family and friends loves it too. They said that when they start eating this chicken curry, they feel a little burning sensation in their mouth and wow really spicy delicious.

Well, many countries had their own version of chicken curry but for me, the Filipino chicken curry is still the best.

Ingredients :

· 2-3 tbsp. oil
· 3 potatoes, peeled, quartered and fried
· 1 lb. chicken, cut into serving pieces
· 3 cloves garlic, minced
· 1 large onion, quartered
· 1 tbsp. patis (fish sauce)
· 3 tbsp. curry powder
· salt and pepper
· 1 cup water
· 1 red bell pepper, cut into big squares
· 1 green bell pepper, cut into big squares
· 3 celery stalks, cut into 1-1/2” long
· 1 cup coconut milk or evaporated milk

Cooking Procedures :

1. Pan fry potatoes. Set aside.

2. In the same pan, fry chicken pieces and brown a little.

3. Add garlic and onion. Sauté for a few minutes until soft.

4. Pour in patis and season with curry powder, salt and pepper. Stir for 2 minutes.

5. Add water. Cover and bring to a boil. Lower the heat; add celery, bell peppers and fried potatoes. Simmer for 3 minutes or until half done.

6. Add milk and stir occasionally. Cook for another 7 minutes (or lesser when using evaporated milk because the liquids will curled).

7. Remove from heat. Serve hot.

Sweet and Sour Fish

Ingredients

1 whole Carp
Salt
1 c White Vinegar
1 c Water
1/2 c Sugar
4 tbsp Vegetable Oil
2 c Bean curd, diced
6 tbsp garlic, minced
1 c Onion, chopped
1/4 c Ginger, sliced into strips
1 tbsp Flour stirred into
2 tbsp water
1 c Mushrooms, sliced
1 c Bell pepper, sliced into strips
1/2 c Carrots, sliced

METHOD

1. Season fish with salt inside and out. Set aside.

2. Mix vinegar, water, sugar, and a
pinch of salt. Set aside.

3. In a large skillet, heat oil. Fry bean curd
until golden brown. Set aside.

4. Fry the fish 5 minutes each side or until
just cooked through. Set aside.

5. In the same skillet, saute garlic until light brown.
Then add the onion, and saute until transparent.

6. Add ginger and vinegar mixture. When the mixture
boils, add in flour to thicken.
Simmer for 5 minutes.

7. Add fried fish, bean curd, bell pepper, and
carrot slices. Simmer for another
5 minutes. Serve hot.
